I make pasta by hand. Either whole wheat, all purpose, Semolina, or 00. And I know HOW to make pasta. Machine or by hand. So this thing, this take forever to push out, sticks to everything unless you use tons of extra flour, this mess of a machine is a pain. I can use a pasta press just as easily or make it all by hand and not have to deal with the enormously tedious cleanup of the flanges for different pastas, etc. Frigidaire's Kitchenaid stuff is basically great, usually, all their products are generally well made, but this? Nope. The exception. And I cannot see how the cleanup would ever be worth it. Let alone the guillotine concept is a bad one. It also take WAAAAAY too long to extrude pasta. I could have made a whole batch in the time it takes to poop out a tiny noodle.

Wow! This attachment is FANTASTIC! I was a bit skeptical after reading some of the reviews and hoped I hadn't made a mistake getting it. I had no issues at all. The spaghetti I made with all semolina flour and rigatoni with plain old white flour. Both came out terrific. The rigatoni cut perfectly with both ends open, not stuck together as some have stated. The only thing with the spaghetti is to make sure you dust the pasta with flour as it extrudes or you make find it will stick together. With the rigatoni I had those drop right into a bowl dusted with flour. This was a fun day and can't wait to try the other attachments. Bucatini is a favorite!!!! Give this a try, be patient and you won't be disappointed.

So I bought this with my Birthday Money. I couldn't wait to open it and get to making extruded pasta. I've been on a kick with making pasta all summer using my kitchen aid press and spaghetti & fettucini attachments. Been making Ravioli's and Tortellini as well. I'm used to working with my quail egg pasta dough.(which is a moister dough)

Anyway I followed the recipe to a T that came with this new purchase. OMG I couldn't get it to come together, it was beyond dry. I added in a little more water and then the dough was too wet to pass through the machine without distorting the pasta shapes. I had a total mess on my hands. I like an idiot started with the Fussili disc. Anyway after much online searching for Extruded Pasta recipes, I stumbled upon a fantastic site and recipe. You want a dry mix to pass through the machine so your shapes hold true and don't stick to each other when you cut them. I'm in love now with this simple recipe I found. It works every time like a charm. My biggest problem is cutting all the pasta to be the same size. When I make small macaroni I run the machine, count to five and cut, repeat and keep adding in more dough crumbs. Cleaning is a breeze as long as you clean out any globs of dough left and then just let it dry overnight. In the morning the dried pieces of dough fall right out.
